Peanut Lettuce Wraps

This dish you can make with chicken or ground beef.  Either fry up a pound of ground beef for a family of five or sautee a couple of chicken breasts.

When done, use a jar of peanut sauce spice you can get at the supermarket in the racks that hold the liquid spices.  Give it a taste and see how you like it.  If you want it thicker, use some peanut butter and pour the sauce in with it.  Mix and simmer.

This will only take a few minutes.  Crack open some iceberg lettuce leaves.  Shred some carrots.  Chop up some fresh cilantro.  Add a chopped jalapeno if you like food hot.  Put all this to the side to serve with the peanut lettuce wraps.

When the meat is done, pour it on top of the lettuce with some plain peanuts mixed in for texture.  Sprinkle with the sides.  This is a nice light change of pace, and one kids will love.  Unless they’re allergic to peanuts.

Plugging Your Arteries

Though there are more and more healthy foods on the market today, we can still find ways to plug our arteries if we try hard enough.  I’m not saying we should.  But sometimes you need a cholesterol buster.  If you spend your entire life eating nuts and berries, you’ll probably turn into a tree.  I don’t want that.  I also don’t want to be gulping down statins the rest of my life to keep my cholesterol in check.  Still, while it’s good to do your best to eat healthy the majority of the time, there are also moments to indulge.  This is one of those moments.

This “plug your arteries” dishes you can cook when the spirit hits you and you just want to chow down and lick your lips afterwards.  It requires bacon, eggs, cheese and a tortilla.  Can you tell where we are headed?

Grill four slices of bacon the way you like.  Leave the grease (or at least some of it) in the pan.  Crack three eggs in the pan and fry them up the way you like.  For the record, I don’t like my bacon crispy and I like my eggs sunny side up.  In a separate pan, melt a tablespoon of butter and lightly fry the soft tortilla so it is slightly crispy. 

When all three of these are done, place the eggs on the tortilla, layer the bacon on top, then cover that with grated Mexican cheese.  Put it in the microwave for about 50 seconds until cheese is melted.  Take it out, fold the tortilla and slice it.

The first bite will make you remember why you only eat this two or three times a year.  But dang, it’s good, isn’t it?  Serve for breakfast, lunch or dinner next time you want to raise your cholesterol numbers for your next physical.  It works.
