Salsa Shrimp Cocktail

There is a special name for this dish we had last week, but I didn’t pay attention, so let’s just call it Salsa Shrimp Cocktail.  In a totally unexpected choice of appetizer, my wife and I sampled this and AMAZINGLY, we agreed it was terrific.

Start with your favorite salsa.  You can make it yourself or buy it in the supermarket.  If you make it yourself, my version includes a 32-ounce can of chopped tomatoes, a whole diced onion, chopped cilantro, a jalapeno pepper (or 2 or more depending on how hot you like life), a touch of vinegar and a dash of sugar (if you want it a bit sweeter).  If you buy your salsa, we love Newman’s Medium. 

Once you get the salsa, you’ll need fresh chilled shrimp and an avocado.  Put the salsa in a bowl big enough to dip chips in.  Take the shrimp and cut them into 2-3 pieces per shrimp (bite-sized).  Slice the avocado into bite-sized pieces as well.  Put the shrimp and avocado pieces into the salsa and mix.

Get out your tortilla chips.  Dig out a huge hunk of this mixture so it includes some avocado and shrimp.  Savor it.  Decide whether you will inhale the whole bowl by yourself or share with others.

If it’s not spicy enough, you can always add some horseradish, too, so it keeps a bit of the shrimp cocktail taste mixed in.
