tournament with our younger daughter Skyler, we decided to stop at Market Fresh
to pick up something quick and tasty for her dinner.
She grabbed a calzone. It’s pretty standard Italian fare, loaded
with meat, tomato sauce and cheese. Skyler loved it, so I decided to
duplicate it. In the spirit of “Meals We Steal,” the recipe is simplified
so you can dish it on the run.
Rather than feeling like you have to do the bread
exactly the way it is done on a calzone, use a tortilla instead.
Get some sliced salami and pepperoni from the supermarket deli.
Buy sweet Italian sausage links, one
16-ounce can of tomato sauce and shredded mozzarella cheese.
Quarter the Italian sausages, brown them in boiling
water, drain, then dice them. Put
the can of tomato sauce in a small pot to boil with oregano and some garlic (we
buy pre-chopped garlic in a jar).
Season it to taste. I put a
couple of tablespoons of each spice in.
Simmer.
Put a small tab of butter in a frying pan, the tortilla
on top, layer with salami, pepperoni, sausage and cheese.
Cover. Keep an eye on
it. Don’t lose your
beer.
When the bottom is crisp, pull it out and spread some
of the tomato sauce mixture across the top like you see those guys do in pizza
shops. Roll it up and slice in
half. You can microwave another
15-30 seconds to make sure the cheese is melted nicely
in.
This will taste so good, you might decide to make another
one. And it’s so simple, you’ll
probably go ahead and do it.
