I hate to let fresh veggies go to waste, so the question arises as to what to do with them. Typically, I put the banana peppers in salads and they are good to chop up on sandwiches, too. Jalapenos can also be used to spice up a sandwich.
The past several years, I’ve limited my bread intake, so this is a quick lunch dish or snack that incorporates the peppers without the book ends. You can use any peppers for this (if you like peppers) or pull other late blooming veggies from your garden.
I chopped up both peppers and some onion and sprinkle on a plate, then cover it with grated cheese and nuke for about 90 seconds. Done. Let it cool for a minute and use your finger to dig in. It’s a great mixture of cheese, onion and pepper. If you like nachos, just melt this mix on top of chips for the same time. Serve to your guests.
