Pineapple Chicken Meatballs

I’m totally winging this one.  Did you know you can make chicken meatballs?  Me neither. Costco has them and they’re pretty good.

But it’s probably more entertaining to try and make them yourself.  So get some chicken breasts, a pineapple and teriyaki sauce.

Chop the chicken into small pieces and then roll them into balls with the teriyaki sauce and juice from the pineapple.  I sure hope this works.  If they don’t stick together, think of something that is food-related and known for its glue-like properties and add it to the mix so the meat stays together.

Fry the balls up in olive oil.

When they are done, pat them down on a paper towel, and cut up some lettuce wraps, sprinkle in some bean sprouts, cilantro and shredded carrots and dump 2-3 of the meatballs in there and see how it tastes.

That’s a good meal, and good for you.  Let me know how it goes and maybe I’ll try it.  For now I’m sticking with Costco’s meatballs.
