Take the leftover rib meat and either shred the pork or cut it into smaller bite-size pieces the way you personally like. Place on a soft tortilla and add barbecue sauce or hickory/mesquite liquid smoke, depending on the taste you prefer. Put this through the microwave so it comes out hot (start with a minute).
Dice some onion and cilantro. Put them on the pork. Squeeze some lime juice on this, then cover with shredded mozzarella cheese and put it back in the microwave for another 45 seconds or so until the cheese is melted.
Pull it out, add shredded lettuce on top. Roll the tortilla up and cut in half. Dig in.
