Spicin' up the Mac & Cheese

Mac & Cheese is always good. We’ve written about some different versions in the past, from the classic homemade to a fried version.  You can take the basics and build on it like so many other dishes.  And the core is simple, so you just look for things you’d like to add.

Here’s another one.  I haven’t tried it yet, but plan to.  Get 16 oz. of macaroni, a pound of grated cheddar (more if you really like cheese), a yellow or white onion, a pound of thinly sliced pepperoni and a jalapeno pepper.

Boil the macaroni, dice the onion and sauté in olive oil. Chop the pepperoni into bite-size pieces.  Mince the jalapeno.  Once the macaroni is done, mix in all the other ingredients except the cheese in a big bowl so it’s evenly distributed.

Then mix in the cheese and save some to layer on the top.  If you like pulverized bread crumbs, you can put this on top to seal the dish.  It will give it some extra consistency.

You end up with a Mexican-pizza Mac & Cheese-type flavor.  People will think you’re a cooking genius, when really all you did was add a few new ingredients.  Try it next time with the stuff you enjoy and let us know here on Meals We Steal how it went.
